“The Migration of Culinary Traditions in the Region” is a book of recipes garnered by IOM staff in Missions across South-Eastern Europe, Eastern Europe and Central Asia. The recipes give insight into the rich cultural heritage of each country and are meant to be shared as a way of celebrating the histories and stories of migration that each meal embodies. The book celebrates how food can bring people together, how sharing a meal can promote understanding and tolerance, and how cuisine evolves with human migration. Three dishes ‒ usually a starter, main dish and dessert ‒ are featured from each of the 20 countries served by IOM’s Regional Office in Vienna. The cookbook has been produced under the auspices of the United Nations’ “Together” campaign that promotes respect, safety and dignity for refugees and migrants.
